Salmon & Ricotta Pasta

Bee's Baking - Salmon & Ricotta PastaAdapted from Super Food Ideas


350g pasta of choice
140g frozen peas
1 tablespoon olive oil (or more, to taste) + extra to cook
400g salmon (either use skinless fillets or from a tin to save money)
1 tablespoon finely grated lemon rind
2 tablespoons fresh lemon juice
120g fresh ricotta cheese, crumbled
⅓ cup fresh basil, finely shredded
Salt and pepper, to taste & to serve


1. Cook pasta according to package directions in salted water, adding peas for the last 3 minutes before draining and setting aside
2. Cook salmon in a frying pan over medium heat in ~2 teaspoons of oil, for about 3 minutes each side until cooked through
3. Transfer salmon to a plate and flake with a fork
4. Add lemon rind, lemon juice, and oil to the pasta mixture then toss to combine
5. Add salmon and basil and toss to combine
6. Divide pasta between bowls, season with salt and pepper, then serve topped with ricotta
