Pork Adobo, Chinese-Style

Bee's Baking - Pork Adobo, Chinese StyleAdapted from Manila Spoon


1kg pork meat (ideally shoulder, boneless ribs, or belly)
40g oyster sauce
40g brown sugar
¼ cup (~60ml) soy sauce
6-8 (~30g) cloves garlic, minced
2 bay leaves
¼ teaspoon black pepper, or to taste
¼ teaspoon sesame oil, or to taste
80g dried shiitake mushrooms (or 40g fresh)


1. Clean and cut pork into 1.5-2 inch cubes (smaller sizes may dramatically decrease cooking time)
2. In a Dutch oven/large pot, combine soy sauce, oyster sauce, sugar, pepper, and garlic
3. Add the pork and coat in sauce, then throw in bay leaves
4. Bring to the boil and simmer, covered and on low
5. Rehydrate mushrooms by soaking in warm water for 20 minutes, then drain and reserve liquid in case adobo sauce dries up
6. Once pork is tender (up to 2 hours of cooking), add mushrooms and simmer for another 5-10 minutes
7. Add sesame oil, remove from heat and serve hot with rice
