Ground Pork Menudo

Bee's Baking - Ground Pork MenudoAdapted from Manila Spoon


6-8 garlic cloves, chopped (~35g)
1 medium onion, chopped
2 plum tomatoes, chopped
500g pork mince
2 tablespoons (40ml) fish sauce
Ground black pepper, to taste
1 cup (250ml) chicken stock or water
2 red skin potatoes, peeled and diced
1 medium carrot, peeled and diced
½ red bell pepper, seeded and diced
½ cup (~80g) raisins (can be substituted with peas)
⅓ cup tomato sauce or ketchup
10-20g brown sugar (or to taste, depending on sweetness of tomato sauce)
Olive oil, to cook and as required
Jasmine rice, to serve
Boiled eggs (optional), to serve


1. Sauté garlic and onion until aromatic, then add tomatoes and cook until soft
2. Add ground pork and season with fish sauce and pepper, cooking until browned
3. Pour over chicken stock/water and bring to the boil
4. Add potatoes and carrots and simmer until slightly tender, then add capsicum and raisins and continue until fully cooked
5. Stir through tomato sauce and brown sugar (and peas, if using)
6. Serve with jasmine rice and boiled eggs
