Basil & Tomato Beef Meatballs w/ Qunioa

Bee's Baking - Basil & Tomato Beef Meatballs with QuinoaAdapted from Donna Hay

Ingredients

2 cups (400g, dry weight) quinoa
500g beef mince
2 tablespoons fresh oregano leaves, chopped
20g parmesan cheese, grated (+ extra, to serve)
1 egg, lightly beaten
3 cloves garlic (~10-15g), crushed
1 brown onion, finely chopped
700g tomato passata (purée)
1 teaspoon caster sugar
2 tablespoons fresh basil, chopped (+ extra, to serve)
Salt and pepper, as desired
Olive oil, as required

Method

1. Cook quinoa according to package directions and set aside
2. Mix to combine mince, parmesan, half the garlic, oregano, egg, salt, and pepper in a bowl
3. Roll mince mixture into tablespoon-sized balls (will make ~16) and refrigerate for 20 minutes
4. Cook meatballs over medium heat for 6-8 minutes until cooked through and set aside
5. Combine onion and remaining garlic in a pan and cook for ~6 minutes until soft
6. Add passata, sugar, and basil and cook for ~4 minutes until thickened slightly
7. Add meatballs to the sauce and mix to coat
8. Serve with quinoa, parmesan, and basil

– Each serving (with quinoa) contains ~723 calories, 87g carbs, 47g protein, and 21g fat
