Spiced Beef Nachos

Bee's Baking - Spiced Beef NachosAdapted from Woman’s Day

Ingredients

1 red onion, chopped
1 red capsicum, seeded & chopped
1 long red chilli, seeded & chopped
2 cloves (~10g) garlic, crushed
2 teaspoons dried oregano
2 teaspoons cumin, ground
1 teaspoon smoked paprika
1 teaspoon cinnamon, ground
1 teaspoon coriander seeds, ground
500g beef mince
400g (1 can) diced tomatoes
125ml (½ cup) water
1 x 400g can (240g drained) red kidney beans, drained & rinsed
1 x 200g packet corn chips
200g grated tasty cheese
To serve: guacamole, sour cream/Greek yoghurt, lime wedges, etc.

Method

1. Cook onion, capsicum, chilli, and garlic over medium heat for 2-3 minutes, until tender
2. Add oregano and spices, cooking for 1 minute until fragrant
3. Increase heat to high before adding the mince and browning for 5-10 minutes, breaking up chunks as it cooks
4. Add the tomatoes and water, then allow to simmer for 10 minutes
5. Add the kidney beans and simmer, occasionally stirring, for another 10 minutes, until sauce is thick
6. Arrange beef and corn chips in an oven-proof dish, then sprinkle with cheese and bake at 180°C/350°F until cheese has melted (alternatively just use the microwave)
7. Serve with desired condiments
