Molasses Cookies

Bee's Baking - Molasses CookiesAdapted from Sally’s Baking Addiction


190g all-purpose flour
½ teaspoon baking soda
1 teaspoon ground ginger
1⅛ teaspoon ground cinnamon
⅛ teaspoon cloves
⅛ teaspoon nutmeg
⅛ teaspoon salt
85g butter, room temperature (can sub half with applesauce, but will be drier)
75g dark brown sugar (used 50g here and subbed the rest with sweetener)
1 egg white (or ½ whole egg), room temperature
1 teaspoon vanilla extract
⅙ cup sugar (or granulated sweetener), for rolling


1. Preheat oven to 180°C/350°F
2. Combine flour, baking soda, spices, and salt in a bowl
3. In a separate bowl, cream the butter for ~1 minute in a mixer
4. Add sugar(s) to the butter and continue to beat for another 2 minutes
5. Add molasses, egg, and vanilla extract and mix until combined
6. Add dry ingredients and beat until just combined
7. Chill dough for 1 hour
8. From 10 large balls and roll each in the sugar/sweetener
9. Bake for 8-9 minutes, then remove from the oven and press gently with the back of a spoon/fork
10. Return to oven for another minute, then remove to cool on trays for 10 minutes
11. Transfer to a cooling rack, and serve

– Each cookie contains ~142 calories, 24g carbs, 2g protein, and 3g fat
