Spicy Beef & Basil w/ Vermicelli Noodles

Bee's Baking - Spicy Beef and Basil with Vermicelli NoodlesAdapted from Bev Cooks


500g beef mince
1 tablespoon Chinese 5-Spice
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 Thai chillies, minced
1 zuccini, cut into a small dice
2 teaspoons fish sauce
½ red bell pepper, cut into small dice
2 scallions, choped
½ cup fresh basil, chopped
¼ cup fresh parsley, chopped
1 lime
125g vermicelli noodles
Salt & pepper, to taste


1. Brown mince (~6 minutes) until cooked through
2. Add Chinese 5-Spice, salt, and pepper, and continue cooking for about 1 minute
3. Add garlic, ginger, and chillies, then continue for another minute
4. Add zucchini and cook for another 2 minutes
5. Add fish sauce (and more seasoning if required) and toss to combine
6. Cook vermicelli noodles according to package directions (place in a bowl, cover with boiling water, stand for 10 minutes, drain and rince under cold water)
7.  Toss noodles with beef mixture, diced red bell pepper, basil, parsley, scallions, and a squeeze of lime juice until combined
