Strawberry-Choc Muffins (Skinny)

Bee's Baking - Skinny Strawberry Choc MuffinsAdapted from Sally’s Baking Addiction


150g (1 cup) all-purpose flour, sifted
½ teaspoon baking soda
½ teaspoon ground cinnamon
50g (¼ cup, tightly packed) brown sugar
¼ cup white sugar (equivalent granulated sweetener was used here)
2 egg whites, beaten
140g applesauce
40g dark chocolate chips
100g strawberries, diced


1. Preheat oven to 160°C/320°F in a fan-forced oven (or 180°C/350°F conventional)
2. In one bowl place flour, cinnamon, and baking soda in a bowl
3. In another bowl, combine both sugars and applesauce until there are no lumps (use a fork if necessary), then add egg whites
4. Mix together both mixtures until just combined
5. Gently fold in strawberries and chocolate chips
6. Bake a in greased or lined cupcake tin for 15-20 minutes or until golden brown and a skewer comes out clean

– Each cookie contains ~143 calories, 29g carbs, 2g protein, and 1g fat
