Spiced Apple Chutney

Bee's Baking - Spiced Apple ChutneyAdapted from BBC Good Food

Delicious in sandwiches, and goes especially well as a side to pork or cheese.

Ingredients

1½ kg cooking apples, peeled and diced (~1kg flesh)
2 onions, finely chopped
350g raisins
550g brown sugar
200g caster sugar
2 tablespoons mustard seeds
1 tablespoon ground ginger
1 teaspoon salt
½ teaspoon allspice
900ml apple cider vinegar

*Recipe will also require jars – enough to contain 2 litres should be more than enough for the batch.

Method

1. Combine all ingredients in a large pot and bring to the boil
2. Simmer until mixture resembles a thick jam – this can take anywhere between 45 minutes and 2 hours
3. While mixture is simmering, sterilize the jars by boiling them in water for 20 minutes (if not using immediately, keep warm in a low oven)
4. Spoon hot chutney into the jars. Use a spatula to aid the removal of air bubbles, and seal with the lid
5. Store in a cool, dark location for 2-3 weeks before opening

Nutritional Information

– Recipe yields ~1.5-2L chutney (~2.2kg in this instance)
– Each serving (20g) contains ~45 calories, 10g carbs, 0g protein, and 0g fat
