Macadamia & White Chocolate Cookies

Bee's Baking - White Choc Macadamia CookiesAdapted from Exclusively Food


65g butter, room temperature (½ can be subbed, e.g. with applesauce, as was in this instance but the result will be drier)
40g brown sugar
25g granulated sweetener (or white sugar)
1 egg white (or ½ whole egg)
½ teaspoon vanilla essence
40g self-raising flour
70g plain flour
60g white chocolate, chopped (or chips)
50g macadamia nuts, roughly chopped


1. Preheat oven to 170°C/340°F (reduce by ~20°C/70°F using fan-forced)
2. Beat butter and vanilla essence with a mixer (~5 minutes), the add sugars and continue until creamy (~3 minutes)
3. Add egg white and applesauce, and mix until combined
4. Sift in flours and mix at a slow speed until combined
5. Stir in macadamia nuts and white chocolate
6. Bake for ~15 minutes

– Each cookie contains ~148 calories, 17g carbs, 2g protein, and 8g fat
