Apricot & Coconut Almond Cookies

Bee's Baking Apricot & Coconut Almond CookiesAdapted from Donna Hay

Ingredients

75 self-raising flour, sifted (~½ metric cup)
40g flaked almonds (~½ metric cup)
40g dessicated coconut (~½ metric cup)
45g brown sugar (~½ metric cup, loosely packed)
55g dried apricots, chopped
30g butter, melted and cooled
35g applesauce (or 35g more melted butter)
1 egg white, lightly beaten (or ½ a whole egg)

Method

1. Preheat oven to 190°C/375°F in a conventional oven (reduce by ~20°C/70°F using fan-forced)
2. Mix flour, almonds, coconut, and sugar in a bowl to combine
4. Mix in butter, egg white, and applesauce
5. Spoon onto lined baking trays and bake until bottoms are golden-brown (~7-10 minutes) and cool on trays

– Recipe yields 9 servings
– Each cookie contains ~153 calories, 17g carbs, 3g protein, and 8g fat
