Apple & Pecan Oatmeal Cookies

90g rolled oats
60g all-purpose flour
½  teaspoon baking powder
½  teaspoon cinnamon
25g butter, melted and cooled
100g brown sugar (+ up to 25g of white sugar if using unsweetened applesauce)
1 egg white
⅛ teaspoon vanilla essence
70g applesauce
1 small tart apple, chopped (~90g)
50g pecan nuts, chopped


1. Combine oats, flour, baking powder, and cinnamon
2. Whisk butter and brown sugar until smooth in another bowl. Add egg and vanilla to butter and sugar mix, then stir in applesauce
4. Mix together wet ingredients together with dry ingredients. Add apples and pecans and stir until evenly distributed
5. Cover and refrigerate for an hour, preheating oven to 160°C/320°F in a fan-forced oven (or 180°C/350°F conventional)
6. Spoon onto lined baking tray and bake for ~15 minutes until golden-brown

– Each cookie contains ~137 calories, 19g carbs, 1g protein, and 6g fat
