Date & Walnut Slice

190g self-raising flour (~1¼ metric cups)
50g brown sugar
25g granulated stevia (or white/caster sugar, may omit/decrease if using sweetened applesauce)
125g dates, chopped
60g walnuts, chopped
60g butter, melted and cooled (add a pinch of salt to dry ingredients if using unsalted)
70g applesauce (~60ml, or another 65g of butter)
1 egg, lightly beaten


1. Preheat oven to 160°C/320°F in a fan-forced oven (or 180°C/350°C conventional)
2. Sift flour into a medium bowl and add both sugars, walnuts, and dates
3. Stir in applesauce, butter, and egg, then until the mixture is consistent
4. Spread into lined or greased slice tin and bake until golden-brown (~15-20 minutes)

– Recipe yields 16 servings
– Each slice contains ~141 calories, 18g carbs, 2g protein, and 6g fat
