Geelrys (South African Yellow Rice)

An excellent side dish to bobotie (click for recipe) – a spiced meat dish with savoury custard

Ingredients

400g long-grain rice (e.g. basmati)
2 teaspoons brown sugar
2 teaspoons tumeric, ground
1 teaspoon cinnamon, ground
1 teaspoon cardamon, ground
40g raisins
50g butter (optional)
Salt & pepper, to taste

Method

1. Combine all ingredients (aside from butter, salt, and pepper), in a pot with water and bring to boil
2. Cover pot and reduce heat, allowing rice to simmer for 6 minutes
3. Remove from heat and leave, still covered, for a further 5 minutes
4. Drain, stir through butter and salt/pepper (if using and to taste), fluff with a fork and serve

- Recipe yields 6 servings
– Each serving contains ~344 calories, 64g carbs, 5g protein, and 11g fat
